Featherlight Gluten Free Yellow Cupcakes.

“Let them eat cake!” Marie-Antoinette (1755-93), the Queen consort of Louis XVI.

These cupcakes are so dainty and tasty! You can put any kind of frosting on it or add a spoonful of lavender to the batter. I like them best with a little butter, marmalade and oranges!

What you need:

  • 1/2 Cup almond flour
  • 1 Cup rice flour
  • 1/2 Cup tapioca flour
  • 1 Tbsp baking powder
  • 1 tsp xanthan gum
  • 1 tsp salt
  • 1  Cups white sugar
  • 1 Cup (almond) milk or butter milk
  • 1/2 Cup canola oil
  • 2 eggs, lightly beaten
  • 2 tsp vanilla or lemon juice

Preheat oven to 350 f.

Mix ingredients thoroughly. Fill 12 cupcake forms or 2X 9 inch cake pans.

Bake cupcakes for appr 18 min and cakes for app 25 minutes.

Dit zijn zulke elegante en lekkere cakejes! Je kunt ze naar believen glazuren of een eetlepel lavendel aan t beslag toevoegen. Ik vind ze t lekkerst met een beetje boter, marmelade en sinaasappeltjes!

Je hebt nodig:

  • 50 gr fijngemalen amandelen (amandelmeel)
  • 100 gr rijstebloem
  • 50 gr tapioca meel
  • 1 eetlepel bakpoeder
  • 1 theelepel xanthan gum
  • 1 theelepel zout
  • 100 gr suiker
  • 250 ml (amandel) melk of karnemelk
  • 125 ml plantaardige olie
  • 2 eieren, losgeklopt
  • 2 theelepels vanille essence of citroensap

Verwarm oven voor op 175C.

Meng alle ingrediënten goed door elkaar. Vul 12 cupcake vormpjes of 2 lage cakevormen. Bak de cupcakes ongeveer 18 min en de cakes ongeveer 25 minuten.
